The theme of the classes will be the history and techniques of Celtic and
Welsh Cooking. Flavorful recipes will be demonstrated with the class enjoying
generous samples.
Join Ken Thorne, Welsh born and Food Editor of Ninnau - the Welsh American
Newspaper, for fun times while enjoying the taste of the very best of these
ethnic foods. Learn to prepare the recipes that have become favorites in many
families. Recipes provided to take home.
We will plan a series of classes with lamb initially as the main theme.
Even if you have never tasted lamb, we will convince you this is a delicious
alternative for your menus. We will try to keep everything as easy as possible
while making the results rewarding.
Our first class will feature an Encrusted
Roasted Loin of Lamb. This boneless
cut looks and cooks like a beef tenderloin. Sprinkled with herbs and spices on
the inside before being rolled, the lamb is encrusted and roasted medium rare or
medium. Ken will show you how to buy this cut and debone it while keeping all
the tender morsels in place. To complement the lamb we will serve a Special
Mint Sauce. Yummy! You will also sample Aunt
Vera’s Fantailed Roasted Potatoes Cooked Snowdonia Style and Portmeirion Peas.
Also, sample a Piped Mash of Carrots and
Parsnips, served once a week in most Welsh homes!
On arrival, you will be served a bowl of an old Welsh favorite –
steaming hot Potato, Leek and Cheese Soup and
Crusty Bread. Normally thought of as a
cream soup, our version is cream-less but very smooth! We will show you how easy
it is to prepare this fabulous soup.
Our dessert course will be Raspberry
White Chocolate Crème Brûlée! You will enjoy a full size serving of this
